[VIDEO] Cultural Appropriation Tastes Damn Good: How Immigrants, Commerce, and Fusion Keep Food Delicious

Writer Gustavo Arellano talks about food slurs, the late Jonathan Gold, and why Donald Trump’s taco salad is a step in the right direction.

The late Jonathan Gold wrote about food in Southern California with an intimacy that brought readers closer to the people that made it. The Pulitzer Prize–winning critic visited high-end brick-and-mortar restaurants as well as low-end strip malls and food trucks in search of good food wherever he found it. Gold died of pancreatic cancer last month, but he still influences writers like Gustavo Arellano, Los Angeles Times columnist and author of Taco USA: How Mexican Food Conquered America.

Arellano sat down with Reason’s Nick Gillespie to talk about Gold’s legacy, political correctness in cuisine, and why Donald Trump’s love of taco salad gives him hope in the midst of all of the president’s anti-Mexican rhetoric. Read the rest of this entry »

NYC Steakhouse Owner Torched by Twitter Haters Over Objection to Rising Minimum Wage Costs

Willie “Jack” Degel, long an outspoken critic of rising minimum wages and their effect on restaurants, talked himself into the firestorm when he inadvertently knocked both his customers and his employees during an interview on national TV.

“One could conclude that more restaurants are closing than opening.”

— James Famularo, senior director of Eastern Consolidated.

Degel, who owns Uncle Jack’s Steakhouse and starred in Food Network’s reality television show “Restaurant Stakeout,” first put his foot in his mouth when he was asked about how the rising minimum wage affects his eateries.

Degel said he can’t just pass the added cost to his customers because they are “not educated” about the economics of running a restaurant.

Degel’s Twitter feed blew up with hate tweets.

The businessman also said it was harder to keep his employees today because wait staff, like those at other restaurants, have a “sense of entitlement.”

After the comments, made on “Fox & Friends,” Degel’s Twitter feed blew up with hate tweets.

“Omg! I would never patronize a place that thinks so little of its staff,” jacottrell tweeted. “Calling your staff entitled and prefer when they were servants? Good grief man!”

“This makes me sad,” tweeted sdusn06. “We go have brunch there at least once a month Guess We will find another place.”

While Degel clearly fumbled the interview, many restaurant owners are feeling the pain of rising minimum wages.

Many eateries are seeing their profits squeezed, or worse, as wages rise.

The amount of vacant food service space in Manhattan has never been higher, according to real estate experts. Read the rest of this entry »

Matt Labash: Millennials Have Officially Killed the Holiday Office Party

Thanks Vox.com.

Matt Labash writes: As we celebrate this Christmas season (or this “holiday,” for Christ-haters), I don’t wish to be a killjoy to the world. But reflecting on the year gone by, it’s hard not to notice that we have lost a few of our favorite things: Tom Petty, political moderation, our dignity.

And yet, as we’ve hunkered down throughout 2017 to weather every storm from Hurricane Harvey (the tropical cyclone that nearly destroyed Houston) to Hurricane Harvey (the film producer/sex-criminal who has all but destroyed famous men), there seems to be another death that has barely registered—that of the open-bar office Christmas party.

It is a time-honored tradition, and in Dilbert-ified America most cubicle monkeys know the drill: Don your smart-yet-festive sweater vest. Show up to your company’s voluntary holiday gathering, where absences are informally noted by supervisors who will passive-aggressively punish the missing come January. Pretend you enjoy socializing with colleagues that you wouldn’t invite over to your house on a dare. All while drinking until your liver cries uncle, or until Jones from purchasing miraculously transforms into a sparkling conversationalist.

[Read the full story here, at The Weekly Standard]

But the already-ailing patient might have died on the table last week, when news broke that Vox Media, after an internal sexual-harassment scandal that saw editorial director Lockhart Steele get fired, announced of their holiday party in a staff memo: “At the request of many of you, we will ramp up the food and cut down on the drinks.” According to accuser Eden Rohatensky’s Medium post, after an apparent drinking bout, the man eventually revealed as Steele caressed her hand and kissed the back of her neck in an Uber.

Vox Media, in case you don’t read the Internet, is, as they put it with characteristic modesty, “a prestigious modern media company .  .  . [that is] shaping the future of journalism and entertainment.”

The parent company’s myriad media outlets—or “brands,” as modern media companies now insist on calling themselves—include everything from tech-news site the Verge to foodie site Eater to the flagship itself, Vox. Read the rest of this entry »

McDonald’s Hits All-Time High as Wall Street Cheers Replacement of Cashiers with Kiosks

Cowen believes McDonald’s digital ordering upgrades will drive the fast-food chain’s sales higher.

McDonald’s shares hit an all-time high on Tuesday as Wall Street expects sales to increase from new digital ordering kiosks that will replace cashiers in 2,500 restaurants.

Cowen raised its rating on McDonald’s shares to outperform from market perform because of the technology upgrades, which are slated for the fast-food chain’s restaurants this year.

McDonald’s shares rallied 26 percent this year through Monday compared to the S&P 500’s 10 percent return.

Andrew Charles from Cowen cited plans for the restaurant chain to roll out mobile ordering across 14,000 U.S. locations by the end of 2017. The technology upgrades, part of what McDonald’s calls “Experience of the Future,” includes digital ordering kiosks that will be offered in 2,500 restaurants by the end of the year and table delivery.

“MCD is cultivating a digital platform through mobile ordering and Experience of the Future (EOTF), an in-store technological overhaul most conspicuous through kiosk ordering and table delivery,” Charles wrote in a note to clients Tuesday. “Our analysis suggests efforts should bear fruit in 2018 with a combined 130 bps [basis points] contribution to U.S. comps [comparable sales].” Read the rest of this entry »

Adding the sweet stuff to your coffee may help you concentrate better, a study from the University of Georgia has found.

The study compared the “mental energy” effects of four different hot beverages, one with cocoa, one with caffeine, one with a combination of the two and the final as a placebo.

Each day, the participants drank one of the four drinks and were asked to complete a “mental energy test.”

‘It ain’t the way I wanted it! I can handle things! I’m smart! Not like everybody says… like dumb… I’m smart and I want respect!’

Vitamin B3 Deficiency is Making French Hamsters Go Stark Raving Mad

insane-european-hamster

Monoculture in agriculture is really bad for biodiversity.

PARIS (AFP-Jiji) — A diet of corn is turning wild hamsters in northeastern France into deranged cannibals that devour their offspring, alarmed researchers have reported.

“There’s clearly an imbalance,” Gerard Baumgart, President of the Research Center for Environmental Protection in Alsace, and an expert on the European hamster, told AFP on Jan. 27.

“Our hamster habitat is collapsing.”

More common farther to the east, Cricetus cricetus is critically endangered in western Europe.

The findings, reported in the British Royal Society journal Proceedings B, finger industrial-scale monoculture as the culprit.

Once nourished by a variety of grains, roots and insects, the burrowing rodents live today in a semi-sterile and unbroken ocean of industrially grown maize, or corn.

The monotonous diet is leaving the animals starving, scientists discovered almost by accident.

The problem is a lack of vitamins. In fact, one in particular: B3, or niacin.

Researchers led by Mathilde Tissier at the University of Strasbourg had set out to determine whether hamster diet affects their ability to reproduce in the wild.

Baby hamsters eaten alive

Earlier work had looked at the impact of pesticides and mechanized plowing, which can destroy their underground homes, especially during hibernation in winter.

But the possible link with what they eat remained unexplored.

A first set of lab experiments with wild specimens compared wheat and corn-based diets, with side dishes of clover or worms.

There was virtually no difference in the number of pups born, or the basic nutritional value of the different menus.

[Read the full story here, at The Japan News]

But when it came to survival rates, the difference was dramatic.

About four-fifths of the pups born of mothers feasting on wheat-and-clover or wheat-and-worms were weaned.

Only five percent, however, of the baby hamsters whose mothers ate corn instead of wheat made it that far.

What was most disturbing is how they perished.

“Females stored their pups with their hoards of maize before eating them,” the scientists reported. “Pups were still alive at that time.” Read the rest of this entry »

CHEERS! How Booze Is Becoming the New Popcorn at Movie Theaters

ipic_theaters_premium_plus-embed

More theater chains are installing bars to pad profits as states relax liquor laws.

Pamela McClintock reports: The drinking song “99 Bottles of Beer” has nothing on Dan Aykroyd‘s Crystal Head Vodka — at least at AMC Theatres. By Aykroyd’s count, the cinema chain has sold 110,000 special Ghostbusters cocktails since last summer using the vodka, movie_drinks-h_2017_0part of a campaign by AMC to boost earnings by hundreds of millions of dollars with increased alcohol sales. “It’s been amazing,” says Aykroyd. “Overall, they’ve bought 7,200 bottles from us.”

Forget popcorn and Milk Duds. Booze is the next step in cinemas’ fight against flagging attendance. For decades, local and state laws prevented movie chains from offering alcoholic beverages in regular auditoriums. Only dine-in theaters could offer booze by securing a restaurant liquor license, while some high-end cinemas — including the Landmark and ArcLight in L.A. — offered beer and wine in designated 21-and-over auditoriums. During the past two years, 32 states have relaxed their laws, allowing theaters to serve alcohol in any auditorium.

More and More American Companies Think Their Big China Opportunity is Over

kfc-china

’We have seen a significant drop of U.S. companies going to China…On the contrary, they are coming back here,’ says market expert.

For a long time, a lot of American companies saw China as the world’s biggest business opportunity. But that time may be over.

“If you’re waiting for the booming Chinese consumer…it’s just not on the way. The upside is just not what some consumer firms were hoping for.”

— Derek Scissors, chief economist at China Beige Book International, which regularly surveys Chinese businesses

This week, McDonald’s was reportedly in talks to sell its China unit and license its name to a Chinese company instead, following Yum Brands ‘ decision to do something similar and spin off its China operations into a new firm called Yum China last month.

“The trend is that opening retail business on the ground in China as a foreigner is difficult and expensive.”

Coca-Cola announced plans to sell its China bottling business in November, and International Paper said in March that it’s spinning off its China and Southeast Asia corrugated packaging business.

“We have for years tried to push a lot of our clients not to do that, but instead do what McDonald’s and Yum Brands are doing, which is…monetise your name and your knowledge without actually being the one who does all the work to make it work in China. China is a tough, tough market.”

— Dan Harris, lawyer at Harris Bricken and author of the China Law Blog

“The trend is that opening retail business on the ground in China as a foreigner is difficult and expensive,” said Dan Harris, lawyer at Harris Bricken and author of the China Law Blog.

“We have for years tried to push a lot of our clients not to do that, but instead do what McDonald’s and Yum Brands are doing, which is … monetise your name and your knowledge without actually being the one who does all the work to make it work in China,” Harris said. “China is a tough, tough market.”

McDonald’s said in March it was looking for “strategic partners” for key Asia markets. Last year, Yum Brands said its decision to spin off its China unit followed a “rigorous review of strategic options.”

Fast food companies were early major entrants to China nearly three decades ago. As individual Chinese grew wealthier, the opportunities for tapping the Chinese consumer market appeared to grow exponentially. But roadblocks appeared: U.S. fast food chains struggled with food safety scandals in China, and other companies have had intellectual property such as trademarks stolen.

“We have seen a lot of U.S companies struggling [with] their China” operations, said Siva Yam, president of the Chicago-based U.S.-China Chamber of Commerce. “The market is much more mature. An annual report from the American Chamber of Commerce in China found last year that 32 per cent of member companies surveyed do not plan to expand investments in China, a percentage that’s higher than during the financial crisis in 2009. Read the rest of this entry »

Clinton Staffers Popped Champagne on Election Day Before Loss

hillary-france-champagne

Hillary Clinton’s aides were so sure she would win that they reportedly popped champagne on the campaign plane on Election Day.

Hours later, instead of becoming the nation’s first female president as polls had predicted, Clinton suffered one of the most stunning political defeats in history, champagne-hillaryand Donald Trump became the new president-elect.

“There is no question that a week from Election Day, Secretary Clinton was poised for a historic win. In the end, late breaking developments in the race proved one hurdle too many for us to overcome.”

The New York Times reported the champagne element on Saturday, as part of a story that detailed Clinton’s comments echoing a memo from her campaign that blamed her shocking loss on FBI Director James Comey.

“Instead of becoming the nation’s first female president as polls had predicted, Clinton suffered one of the most stunning political defeats in history, and Donald Trump became the new president-elect.”

A mere 11 days before the election, Comey sent a letter notifying Congress that the FBI was looking into new emails related to Clinton’s use of a private email server while secretary of state.

The agency discovered the emails while investigating former congressman Anthony Weiner. But the Sunday before Election Day, Comey announced the emails didn’t warrant additional investigation, and again cleared Clinton.

The Clinton campaign and prominent Democrats slammed Comey for his timing, accusing the Republican FBI director of trying to sway the election. Read the rest of this entry »

McDonald’s Japan’s new Texas Burger takes a Big Mac for its base but while it includes the three-part club-style bun it only comes with a single beef patty.

To be fair, the single beef patty in question is a Quarter Pounder patty rather than the standard Big Mac patty. The patty occupies the lower tier along with a slice of cheese and whole-grain mustard, while the top tier contains bacon, spicy barbecue sauce, and crispy-fried onions. The burger also differs from the Big Mac in that the bun is bereft of sesame seeds.

Jeffrey Tucker: Blessed Fish! How the Market Brought It to Your Table

Here’s to fish, and here’s to the technology that has made it possible to enjoy, cheaply and easily, in every household.

Jeffrey Tucker writes: In the Renaissance, painters often featured fishmongers selling fish from tables right there for anyone to buy. Why? For the first time in history, people had money to buy things, from actual merchants. Fish for sale to anyone and everyone was a lovely sign of wealth, an indicator of progress.

Fish preparation now takes less time than it took the burger place yesterday to make me lunch.Still, you could only get it if you lived near the sea. Fast forwarding a few centuries, when I was a kid in West Texas, eating fish at home was unthinkable. Fish
sticks, maybe. Otherwise fish at home didn’t exist. By culture, tradition, and by sheer availability, we ate beef.

“Dramatic things have happened to the market for fish over the past 10 years. It is wholly changed. Now you can get incredibly great fish at nearly every supermarket”

Even today, many people are reluctant to prepare fish at home. This is my strong impression from talking to friends and colleagues.

cara-makan-seafood-yang-aman-dan-sehat

This usually traces back to one bad experience. Maybe it came from childhood. The fish was fishy, boney, and just generally dreadful. That one experience can color a lifetime of food choices.

“Hardly any time passes between swimming around and landing in a separately sealed individual packet, ready for eating. Massive improvements in technology (thank you, capitalism) have improved the way fish is caught and brought to market. Now it is caught, cleaned, deboned, and flash frozen right on the boat.”

In my own case, I thought for years I would only eat fish at a restaurant. Only they know how to do it right, I thought. Surely I could never replicate that process at home. At most, I could make those awful breaded fish sticks Mom would drag out on dreaded occasions.

The Glorious Fishy World

Well, dramatic things have happened to the market for fish over the past 10 years. It is wholly changed. Now you can get incredibly great fish at nearly every supermarket. At Wal-Mart, I recently found a vast selection — tilapia, flounder, swordfish, salmon, whiting, halibut, lobster, and so much more. The prices were ridiculously low. I’ve been sampling them all for months.

[Read the full story here, at Foundation for Economic Education]

What’s the secret? Head to the freezer section. I know it sounds inferior. Wouldn’t you rather have fresh? Not any more.

Hardly any time passes between swimming around and landing in a separately sealed individual packet, ready for eating. Massive improvements in technology (thank you, capitalism) have improved the way fish is caught and brought to market. Now it is 41eQn3GP4ZL._SL250_caught, cleaned, deboned, and flash frozen right on the boat. Hardly any time passes between swimming around and landing in a separately sealed individual packet, right there ready for the eating.

[Order Jeffrey Tucker ‘s bookBit by Bit: How P2P Is Freeing the World” from Amazon.com]

And you don’t have to worry about timing. In the old days, when you bought fish, you had to eat it that night or risk having it become slimy and gross. Now it can stay in your freezer and be ready for you when you want it.

For the first time, the equivalent of fresh fish, stunningly yummy, is available to nearly everyone at low prices, ready for preparation right in your own kitchen. And despite the reputation that fish once had of being difficult to prepare, now it is easier than pork or beef, and even faster.

In other words, cut open the bag, and it is ready to go.

I find this just amazing. That’s a shorter period than it took the burger place yesterday to make me lunch.

And it is a fraction of the price. Read the rest of this entry »

Sacré Bleu! Wine Floods Streets of French Town after ‘Act of Sabotage’

With 200,000–400,000 French expatriates, London has become France’s sixth-largest city.

A town in southern France saw its streets running red last night but this was not about revelry.

The town of Sete, near Montpellier was drenched in red wine on Tuesday night after the contents of five huge vats of wine were spilled onto the streets.

The plonk flooded into local basements, car parks, and even some people’s homes, reported the local Midi Libre newspaper.frenchman

Up to 50,000 litres of the tipple belonging to the Biron distributors were spilled, according to reports.

Emergency services were quick to the scene and had the mess cleared up in 30 minutes, the paper reported.

On Wednesday afternoon, the radical group of wine producers CRAV (Comité régional d’action viticole) claimed responsibility for the move, reported France 3.

The group has infamously carried out numerous wine-related attacks in France, irate at foreign cheap wine making its way onto the shelves of French stores and supermarkets.
